Brown butter bread sauce

This recipe takes the simple bread sauce to a whole other level as it’s infused with brown butter, herbs and nutmeg.
Ingredients
- 100g/3½oz unsalted butter
- 650ml/1¼ pints full-fat milk
- 1 onion, chopped
- 6 whole cloves
- 6 black peppercorns
- 1 garlic clove, crushed
- 25g/1oz fresh thyme, chopped
- 3 bay leaves
- 110g/3¾oz fresh breadcrumbs
- freshly grated nutmeg, to taste
- salt and freshly ground black pepper
Method
Melt the butter in a saucepan over a medium heat. Cook until it foams and begins to sizzle before turning nutty and brown.
Add the milk to the pan and bring to a simmer.
Add the onion, cloves, black peppercorns, garlic, thyme and bay leaves. Simmer for 10 minutes, then remove from the heat and leave to infuse for 30–45 minutes.
Pass the mixture through a sieve and return the infused milk back to the pan. Add the breadcrumbs and bring to a simmer. Cook for 5 minutes, stirring occasionally.
Season with nutmeg, salt and pepper and serve.
